Kuwait – British lamb boneless shoulder 

A food importer and distributor wants a UK supplier of lamb.

It is looking for:

– lamb boneless brn shoulder vp (X & H grade lamb), frozen
– sourced from a 4 rib bone in forequarter with the boning done by the shank, arm and blade bones being fleeced from the rib cage by first marking down either side of the feather bones at the neck end and fleeced from the brisket across the ribs to the spine
– the boning and removal of the bones must be done in such a manner that the maximum meat is removed cleanly from the bones, with the foreshank, arm and blade bones removed
– ensure score marks are kept to a minimum especially around the major muscle regions
– the prescapular gland and associated fat must be removed Inter muscular fat shall be removed and external fat trimmed to maximum of 7mm thickness at any one point, the sternum fat is also to be trimmed to ensure that the product is to a minimum of 80CL
– all bone pieces, paddywhack, sinew, bloodstains, loose pieces, ingesta, wool fibres and other fine matter must be removed, be free of sawdust and thoroughly cleaned before packing
– the boneless shoulder is to be rolled so that on completion the brisket edge is on the outside of the roll and any protruding pieces are tucked inside the rolled forequarter
– individual boneless shoulders then put through shaping equipment which applies the netting
– pack netted shoulder into a plain 275 by 390 chilled bag – pack 8 packs per carton
– weight range: N/A
– packaging: TP8 frozen carton, netting and a 275 by 390 plain bag
– labelling required: Arabic insert and carton label
– pieces per carton: 9 per carton
